Potluck Inspired by the Metis Cookbook

TEACHER DESCRIPTION and / or REFLECTION:
The Metis Cookbook and Guide to Healthy Living contains recipes gathered from members of the Métis community across Canada. The cookbook contains not only recipes modern and old, but also health tips which will address a variety of topics from healthy living ideas, nutritional information, to suggestions on how to modify a traditionally rich recipe into a healthier alternative. In our final activity for Culinary Arts, the students made recipes from this cookbook, adding touches of their creativity and showcasing their knowledge of food and ingredient preparation and substitutions. The dishes made used different cuts of venison, which for many students was their first-time cooking with venison. Their dishes turned out amazingly!
STUDENT REFLECTION:
I enjoyed the final potluck we had in Culinary Arts. We got to try cooking with deer. Some of the recipes made by everyone in class are BBQ deer ribs, a meat pie, stews, and bannock. It was a fun experience, and we were proud of the food that we cooked.
